I know, I know. “Where have you been!?”
It’s been a year already. I had my car fixed, and then it lit up like a Christmas tree with every dashboard light there was. Work has gotten absurdly busy, and honestly taking on Cayenne’s full care has zapped my energy. That being said it’s been a long time since I made time to sit, vent and just post something. Blogging is such a cathartic task for me, a lot of my woes seemingly vanish when I sit down to focus on other aspects of life in writing. That being said, I went through all my photos I have taken and I figured why not knock off an easy post.
Today’s focus is tacos.

A super easy dinner option, especially tasty on a Tuesday, tacos are usually a crowd favorite. I like to pair mine with a margarita usually, but for an at home meal I skip it. Depending on the taco shell you like, you can choose your tortilla as you please, but know today’s post is based on the recipe I used in the picture.
I always tend to quickly snag the Mission flour taco size tortillas, as I am a soft taco fan. They do make street taco style tortillas, I just haven’t tried them. I grab whatever pound of ground beef is realistically on sale in the meat department, beggars cannot be choosers. I usually have all the seasonings needed to make tacos at home in the spice cabinet. The spices you need are, salt, paprika, oregano, chili powder, onion powder, garlic powder and sometimes red pepper flakes and pepper for taste. I eye ball these spices, and taste the cooked meat as I try to get the flavor to my liking. That being said, diced onions and minced garlic browned in a pan before the meat goes in is a fantastic addition to the meat.
After that, I grate my own cheese. Preferably a block of mild cheddar, Mexican blend or a Colby Jack. I fill a bowl so everyone can top their taco as they wish. Grate to your liking. If you don’t want to spend the time risking your knuckles, a bag of pre-shredded cheese will do too.
After that, I dice one tomato, and cut down a bit of lettuce as well. Both of these get their own bowl in my house as some people don’t like both toppings. Black olives are optional, I am a fan, but feel free to leave them off your menu if your family hates them. I was smart one of the last times I ran to the store, I bought squeeze tube sour cream from Daisy and it has been game changer.

Once all of the pieces have been set up, the fun begins. Grab a tortilla, pack it with meat, cheese, lettuce, tomato, top with a dollop of sour cream or hot sauce and eat up!! I am the weirdo that saves the extra sauce packets for meals like this where someone might want an extra pop of flavor. This is more than enough food for two people, though I can’t give you an exact measurement of how many servings this makes.
If you do have extra toppings, turn your toppings into a walking taco by dumping them in a bag of Doritos and shake it up. This is one of the quickest equestrian show day meals. If you make these quick tacos or a walking taco let me know in the comments!!
